It’s one thing to suffer a pandemic-like impact on a restaurant business when that business starts flush with cash, with an irreplaceable menu, an industry-leading reputation, and a few Michelin stars to get people coming back when the world is safe again. It’s another thing when the restaurant is Americana at its best - quick, consumer-priced food, accessible, predictable, and tourist-friendly, serving a tourist economy, and there are no tourists. And no available housing for the staff. We’ll look at survival in the face of overwhelming odds with our guest.
